Larger locations, retail, warehouses, multi-building should have an technologist involved experiences with with the equipment they are maintaining or installing. They should have special tools (often just software on a mobile device) that helps them optimize the "controller" (brain) and "access points" (radio) so that they work together for seamless WiFi coverage for your devices and locations. There are special devices for doing WiFi surveys as well.

 +Personally, I've had good results with both Unbiqiti and TP-Link systems in complex installs. Walking around and tuning the channels, coverage pattern and frequencies. Sometimes moving antennas helps.  I've seen problems with "reflection" off of metal shelves, freezers, and even walls with metal mesh in them. Seen one an office in what used to be an X-ray machine room. Lead lined walls do not pass WiFi.
